Now that the club have said that they expect Salah to be back before the end of the season, what are the odds on him signing off by getting the winner against Brentford to confirm CL football for us next season?

As it stands, there's a very real possibility it will come down to the last day of the season. We have a tough run in, and as poor as Chelsea and Villa have been recently, you can bet your house they'll show up for us. Villa are level on points, and, although they've been hit or miss lately, they're more than capable of getting a couple of results.
Brighton are in excellent form, having dropped just 4 from 24 points, and are very likely to win their next 3; Newcastle, Wolves & Leeds. Their final game is against Utd, who they already beat at Old Trafford this season.
1 win and 2 draws guarantees 5th. Anything else will likely see us quietly rooting for Utd on the final matchday.

The only thing going for us currently is that Aston Villa may still be in Europe by then, so they may have one eye on that game. That is, if they make it past Forest in the semis and make it to the finals, though.

If Villa make it past Forest, they will have a European final 3 days after playing us. I doubt any of their normal 11 would be on the teamsheet.
